THE CHEF AND HIS SKILLS

The cuisine style of Pivovarský dvůr Plzeň has its roots in the traditional Czech country cooking but our menu also offers some extravagant combinations and some of the dishes bear names so mysterious that they just cannot be resisted… Among the horse-d’oeuvres you may thus find a steak Tartar of salmon next to the traditional Czech pork headcheese with chopped onions, and roast escargots next to the Olomouc cakes of cheese. As to the main courses, we especially recommend to your attention the mouth-watering “boobies of the brewery shepherdess” or the cooper’s skewer. We further dare to claim that some of the dishes are not to be seen anywhere but here in PURKMISTR – just try to ask elsewhere for the chicken liver in onion lard or pancakes with jam made of dark lager!

  • the Chef at Pivovarský dvůr Plzeň since 2008
  • worked with several affiliates of the Marriott Hotels chain in Europe
  • was responsible for catering for eg. the ex-president of South Korea, Queen Elizabeth II of Great Britain, former Vatican legate to CR Giovanni Coppa etc.
