BREWING PURKMISTR
The city of Plzeň (Pilsen in German) is synonymous to quality beer – words “pils” or “pilsner” have become an internationally used and acknowledged termini technici to identify the type of beer that has its origins in our city. Back in the Middle Ages, the Pilsen burghers (i.e. citizens who owned at least one house in the town) were privileged to brew beer – not only for their own consumption but also sale. They would usually sell the beer in the so-called mázhaus, the carriageway of their house. The quality of such beer was rather questionable and the fame of the Pilsner beer as we know it today started only in the 1840s. It is when the Burghers’ Brewery is established as the merger of the individual brewing rights, becoming thus the ancestor of today’s Pilsner Urquell Brewery.
However, we would like to convince you that Pilsner Urquell is not the only beer worth mentioning in Pilsen and that there are other brands you may add to your favourites.

Here at PURKMISTR Brewery, we started to brew our own beer as we came to the conclusion that it was high time someone restored the traditional beer-brewing methods. Moreover, we wanted to preserve the tradition of the oldest municipal brewery in the Czech lands in Domažlice which, until its closing down in the early 2000s, owned the PURKMISTR trade mark.
The beer is brewed according to old recipes of several kinds of brewery barley of the highest quality, and the hops grown in the Žatec hop-growing region.
The beer is brewed in 2–3 mash way using the classical technology, where one brew takes 12 hours.
The main fermentation then takes place in open fermentation tanks placed in the brewery cellars for 7–9 days. During the main fermentation, alcohol appears in the mash and carbon dioxide is released. After the main fermentation has ended, the yeast layer sinks to the bottom and the young beer is pumped to 13 lager tanks where it is let to mature for 1 month (some special brews such as jubilee beers mature even longer time). Only then the beer is fit for draught or bottling.
Our beer is not filtered and not pasteurized in order to preserve all the original nutrients. The beer looks slightly turbid and less transparent than other, filtered beers, but it is just the silt that contains “all the good things” – B-vitamins, sugars, yeasts, minerals etc. The beer is “thicker” and if consumed sensibly, it has very positive effect on human organism.
We use the Pilsen soft water to brew our beer, which is another secret of successful beer brewing in Pilsen.
The individual recipes that we use to brew our beer have been set, tested and balanced by the famous Pilsen Master Brewer Josef Krýsl, who has been awarded numerous prizes for his recipes and technologies applicable to beer brewing in small and in-restaurant breweries.
